Even before I was a chocolatier I remember eating raspberries from their garden and hoping I would get to take home a jar of my aunt's homemade raspberry jam. Years later, when trying to make the same jam, I found out from my cousins that there was nothing special about her recipe...the tart strong raspberry flavor really was all from her berries. This bonbon is a tribute to my Aunt Jane and her delicious jam. It is also one of the most classic and timeless dark chocolate bonbon flavors.
