Cherry

A dark chocolate shell filled with dark chocolate cherry ganache enrobing a whole dried cherry.

When I was a young child my parents had an enormous cherry tree in the back yard. Every year my mother and father would pick the cherries and my mom spent hours canning and preserving them. Now that they are retired my father's love for cherries continues as he has planted two cherry trees in the yard of his current home. Last summer I returned to my childhood, climbed the trees and helped him pick the cherries. Bundle by bundle, I picked the cherries and tossed them to the ground where they would later be collected, washed and pitted. Cherries have such a variety from sweet to tart, pie to table. As a child I loved sweets. One of my favorites was a box of chocolate covered cherries that my mom would give me for Christmas every year. This bonbon is inspired by my father's love for cherries and his inspiration to place a whole cherry in the center of my creations as a more sophisticated form of the candies I loved as a child. A delicious treasure enrobed in chocolate.
