Matcha

A dark chocolate shell filled with a layer of white chocolate match ganache followed by a layer of midnight dark chocolate ganache. 

While in Japan I had the honor of visiting a tea farm with a local guide.  Driving up the mountains through fields of tea plants was an amazing site.  As I walked through the fields, running my fingers over the tea leaves I learned about how large fans must keep the plants cool in the heat of the summer. And how each tea leaf would be picked by hand.

Later at the factory as my guide taught us how tea leaves were rolled and carefully walked us through the ceremony of making match tea and how to truly appreciate its flavor, I knew match was more than just a green powder.  Matcha tea was meant to inspire principles of simplicity and mindfulness.  That afternoon we visited multiple tea shops in town and were honored with tastings, ceremonies, and so many amazing tea stories. 

We finished the day at a matcha ice cream shop. This shop had ice cream flavored with matcha from levels one (just a little matcha) to 8 (very strong matcha). Our guide advised us “you’re taste is probably not ready for the higher levels of matcha yet so you had best try level 2 to 3.” I tasted level 4 and promptly headed to the back of their store where I could buy matcha straight from the farm we had just visited.
