Dark Chocolate Strawberry

A dark chocolate shell filled with dark chocolate strawberry ganache.

My nephew is a really great gardener and loved plants and everything outdoors when he was young. One summer when I asked him what he would like to do for a special date with me (his aunt) he asked to plant a garden. We spent hours at the greenhouse looking at and choosing plants for the garden. He then proceeded to plant pees, cucumbers, tomatoes, egg plant and most of all strawberries. The garden was bountiful and as most of the plants were annuals they died off that winter. The strawberries, however, remained. They came back year after year and produced the most strawberries I've ever seen from a home garden. He loved the plants so much that years later when I sold that home we had to spend time transplanting a few of the pants into pots and then into garden beds at my new house. We still pick strawberries from them today and while their juice is not enough for all the chocolates I make now it is still easy to go to nearby farms and find bountiful strawberry crops in Oregon. A day of strawberry picking followed by strawberry smoothies, shortcake and strawberry bonbons is a delightful day. This bonbon is crafted to taste like biting into a chocolate covered strawberry right out of the garden.
