Bailey's Irish Cream

A dark chocolate shell with a dark chocolate Bailey’s Irish Cream ganache.

My father came to visit me a few weeks ago.  We had a day with nothing planned and I suggested we make chocolates.  I asked him what his favorite flavor was and he said “Well, I really like them all but I think the Bailey’s Irish Cream is my favorite today.” So, we made Bailey’s bon-bons together.  He was my taste tester while making the ganache filling helping me find just the right dose of flavor.  The key to making a Bailey’s bon-bon is to make the Bailey’s from scratch using high quality chocolate, cream, sweetened condensed milk and of course high-quality whiskey.  We had a great afternoon together, sharing moments while painting chocolates, tempering chocolate and came out with some delicious treats.  This recipe is the one we developed together.  We would encourage you to share your stories of creation, art, chocolate and Bailey’s with each other.


Ingredients:

  • Filling: Dark chocolate (cocoa mass, sugar, cocoa butter, soy lecithin, vanilla), White Chocolate (Sugar, coco butter, whole milk powder, soy lecithin, sunflower lecithin, natural vanilla flavor), Jack Daniels Whiskey, Cream, Sweetened Condensed milk (Milk Sugar)
  • Shell: Dark chocolate (cocoa mass, sugar, cocoa butter, soy lecithin, vanilla), Coco butter
  • Coloring on outer shell - Coloring on outer shell - Coco butter, food grade mica based pearlescents, Colorants Snow White (Cocoa butter, Titanium Dioxide (TI02), Chef Rubber Colored Cocoa Butter Bronze (Cocoa butter, FD&C dye and lake colors: Blue 1, Blue 2, Red 40, Yellow 5, Yellow 6, TiO2, or calcium carbonate)
