Midnight Forest

A  dark chocolate shell with a Valrhona dark chocolate ganache center.

This dark chocolate bonbon was designed specifically for my cousin and her wedding. She spent much of her life in the forest of Mount Ranier national park with her grandfather, family and friends. Coming down the mountain in the dark, surrounded by trees, with ortadox cathedral music playing, there is no more profound connection to nature and creation. Feeling simultaneously on top of the world and the smallest soul in the universe.

With more than 8 billion people on the earth with us today and an estimated 117 billion people throughout our history...we are  just specks in our miraculous, complex, fantastic universe.  Yet we are more than these numbers.  We are our connection to others. We are family, friends, support, trials, hopes...love. May our lives be measured in our connection to others and may this chocolate be enjoyed in your special moments and inspire you to measure your life not in numbers...but in people.

Filling: Dark chocolate (cocoa mass, sugar, cocoa butter, soy lecithin, vanilla), cream, milk

Shell: Dark chocolate (cocoa mass, sugar, cocoa butter, soy lecithin, vanilla), Coco butter

Coloring on outer shell – Chef Rubber Green Emerald Colored Coca Butter (Cocoa butter, FD&C dye and lake colors: Blue 1, Blue 2, Red 40, Yellow 5, Yellow 6, and natural colors.), Roxy Rich Colorants Snow White (Cocoa butter, Titanium Dioxide (TI02),
