Hawaiian Dark Chocolate
As part of my training in chocolate, I had the privilege of working in Hawaii on the Kamananui Cacao farm and the Manoa Chocolate factory for a week. It was phenomenal. We did every step of the process from planting, harvesting, shelling, and fermenting the cacao; to drying, roasting, melanging, and conching our cacao beans. Feeling, smelling, and tasting each step of the process added so much to my understanding of flavor, quality and value of chocolate.
Cacao trees can only grow between the 21st latitude parallels north and south of the equator. This bonbon is made with Chocolate homegrown here in the USA on the Kamananui farm where I was working. It is full of Hawaiian flavors of orange, pineapple and banana. Taste it next to another dark or milk chocolate bonbon and you will experience the flavors as well. USA grown, Hawaiian processed and hand made into bonbons here in Portland, we hope you enjoy this bonbon and that it will inspire you to learn even more about chocolate.
