My mom has always loved cheesecake. She grew up in New York City and had access to the best cheesecake around as a child. No wonder it became such a favorite dessert. She also makes a wonderful cheesecake. The flavor however is hard to replicate in chocolate...and then I found goat cheese. With a unique creamy flavor it was perfect for making a wonderful chocolate cheese cake flavor with a deep richness that lingers and inspires a second bite.
